Spring Quiche with Asparagus and Peas
Ingredients
9 inch pie crust
8 spears of asparagus, ends trimmed and cut in 1-inch pieces
1/2 cup peas
2 sprigs green onions, chopped
6 eggs
1 cup shredded havarti or any mild melty cheese
1/2 cup heavy cream
1/2 cup cooked ham or pancetta (optional)
1 tsp dried thyme
3/4 tsp salt
1/4 tsp black pepper
Directions
Preheat the oven to 375F.
In a large bowl, add the eggs and whisk them.
Next, add in cheese, cream, thyme, salt and pepper, and mix until well incorporated.
Arrange the asparagus pieces, peas, green onion, and ham/pancetta (if using) onto the crust. Then pour the egg/cheese mixture on top of it.
Put the quiche in the oven and bake it for approximately 35-40 minutes, or until set.
