Spring Quiche with Asparagus and Peas

Ingredients

  • 9 inch pie crust
  • 8 spears of asparagus, ends trimmed and cut in 1-inch pieces
  • 1/2 cup peas
  • 2 sprigs green onions, chopped
  • 6 eggs
  • 1 cup shredded havarti or any mild melty cheese
  • 1/2 cup heavy cream
  • 1/2 cup cooked ham or pancetta (optional)
  • 1 tsp dried thyme
  • 3/4 tsp salt
  • 1/4 tsp black pepper

Directions

  1. Preheat the oven to 375F.
  2. In a large bowl, add the eggs, cheese, cream, thyme, salt and pepper. Whisk them together.
  3. Arrange the asparagus pieces, peas, green onion, and ham/pancetta (if using) onto the crust. Then pour the egg/cheese mixture on top of it.
  4. Put the quiche in the oven and bake it for approximately 35-40 minutes, or until set.
