Steak and Pepper Fajitas

Fajitas

Ingredients

  • 1 lb flank steak
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1/2 onion, sliced
  • 1 Tbsp avocado or vegetable oil
  • Optional toppings: salsa, avocado, cheese, sour cream

Fajita Rub:

  • 1 Tbsp olive oil
  • 1/2 lemon, squeezed
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp paprika
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • Corn or flour tortillas

Directions

  1. Slice flank steak into strips and place into a freezer bag or storage container with olive oil, lemon, and fajita rub seasonings. Let sit for at least 30 minutes.
  2. Slice bell peppers and onion into strips. Set aside.
  3. Heat a cast iron or heavy bottom skillet to medium high heat. Add oil and the seasoned meat in a single layer. You may have to work in batches so you don’t overcrowd the pan. Sear all the meat for about 1 minute on each side (the small strips will cook quickly). Remove from the pan and set aside.
  4. Next add the veggies to the same pan and sauté for about 5 minutes until slightly softened and tender.  Once cooked add the meat back to the pan and turn off the heat.
  5. Serve fajitas in your favorite tortillas with toppings of choice!
