Susan Branch Tomato Soup
Ingredients
1 tablespoon olive oil
2 garlic cloves, minced
2 pounds fresh tomatoes
1/2 cup chicken broth
1 tablespoon butter
1 tablespoon lemon juice
2 tablespoons minced fresh basil or parsley
Salt and pepper, to taste
Parmesan cheese, to taste
Directions
Cut tomatoes into quarters or eighths and pulse in a blender or food processor for about a minute.
Heat olive oil in a medium saucepan. Sizzle garlic for a couple of minutes and pour in tomatoes and all other ingredients except for Parmesan.
Simmer for 10 to 15 minutes. Serve immediately sprinkled with Parmesan.
Optional: Add 10 oz. cooked tortellini, cooked and crumbled sausage, diced tofu, or shrimp.
