Susan Branch Tomato Soup

Ingredients

  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 2 pounds fresh tomatoes
  • 1/2 cup chicken broth
  • 1 tablespoon butter
  • 1 tablespoon lemon juice
  • 2 tablespoons minced fresh basil or parsley
  • Salt and pepper, to taste
  • Parmesan cheese, to taste

Directions

  1. Cut tomatoes into quarters or eighths and pulse in a blender or food processor for about a minute.
  2. Heat olive oil in a medium saucepan. Sizzle garlic for a couple of minutes and pour in tomatoes and all other ingredients except for Parmesan.
  3. Simmer for 10 to 15 minutes. Serve immediately sprinkled with Parmesan.
  4. Optional: Add 10 oz. cooked tortellini, cooked and crumbled sausage, diced tofu, or shrimp.
