Sweet Corn, Tomato and Basil Salad

Ingredients

  • 4 ears corn
  • 1 Tablespoon butter or coconut oil
  • 1/3 teaspoon salt
  • 2-3 large vine ripe tomaotoes
  • 1 bunch fresh basil

Directions

  1. Simply shave kernels off 4 ears fresh organic cobs of corn, and sauté on medium heat with butter, or coconut oil in a medium frying pan, stirring for 3-5 minutes.
  2. Turn off the heat and add salt.
  3. Stir and let corn cool a bit, while chopping up tomatoes, and fresh basil into small 1/8inch pieces (about 1/2 cup packed basil).
  4. Add tomatoes and basil to the corn, stir and serve!
