Simply shave kernels off 4 ears fresh organic cobs of corn, and sauté on medium heat with butter, or coconut oil in a medium frying pan, stirring for 3-5 minutes.
Turn off the heat and add salt.
Stir and let corn cool a bit, while chopping up tomatoes, and fresh basil into small 1/8inch pieces (about 1/2 cup packed basil).
Add tomatoes and basil to the corn, stir and serve!
