Tex-Mex Slaw with Cilantro Ranch

Ingredients

  • 4 cups thinly sliced green cabbage
  • 4 radishes, sliced
  • 1 carrot, grated
  • 1 spring onion, thinly sliced
  • 1/2 cup fresh cilantro

Dressing Ingredients

  • 1/2 sour cream
  • 1/2 cup buttermilk
  •  1/4 cup mayonnaise
  • 1 garlic clove, minced
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup fresh herbs (spring onion, chives, cilantro, dill)
  • 1 tsp fresh lemon or lime juice
  • 4-5 pickled jalapeño slices, plus 1 tsp juice

Directions

  1. To a large bowl add the sliced cabbage, radish, carrot, onion, and cilantro
  2. In a food processor, add all dressing ingredients. Season to taste.
  3. Dress the salad to desired consistency and reserve remaining dressing in a jar for future use or enjoy as a delicious dip.
