Yogurt Bread With Fresh Strawberries

Ingredients

  • 2 cups all-purpose flour (plus extra for dusting)
  • 1 cup plain yogurt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon honey
  • 2 tablespoons olive oil
  • freshly chopped strawberries
  • balsamic drizzle
  • basil or microgreens for garnish

Directions

  1. Preheat your oven to 375°F. Line sheet tray with parchment paper.
  2. In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, salt and honey.
  3. Add the yogurt and olive oil to the dry mixture. Stir until the dough begins to come together. The dough will be slightly sticky.
  4. Lightly flour a clean surface and turn the dough out onto it. Knead the dough gently for about 1-2 minutes, just until it becomes smooth and cohesive. You may need to add a little extra flour if it’s too sticky.
  5. Form the dough into a loaf shape and place it on a parchment lined baking sheet.
  6. Bake in the preheated oven for 30-35 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom. An internal temperature of about 190°F (88°C) is also a good indicator.
  7. Remove the bread from the oven and let it cool in the pan for about 10 minutes. Then turn it out onto a wire rack to cool completely.
  8. Once cooled, slice the yogurt bread and enjoy it with fresh strawberries, balsamic and some flaked sea salt.
