Zucchini Muffins

Ingredients

  • 2 cups zucchini, grated
  • 2 eggs
  • 2/3 cup canola oil
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1 tsp vanilla
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1/8 tsp nutmeg
  • 3/4 tsp baking soda
  • 1/2 tsp baking powder
  • 2 cups all purpose flour

Directions

  1. In a large bowl add the grated zucchini, eggs, oil, brown sugar, sugar, vanilla, salt, and spices. Mix to combine.
  2. Add flour, baking powder and baking soda to the bowl and gently mix just until just combined.
  3. Scoop about 1/4 cup batter per muffin into a pan lined with paper inserts. Bake at 350 degrees for 25 minutes or until a toothpick inserted into the middle of a muffin comes out clean.
