What’s in Season: February

Although winter is in full swing, we still have an abundance of fruits and vegetables to enjoy during these colder months. An exciting addition to our February harvest will be plump, juicy blueberries, which are such a treat this time of year. The anti-inflammatory, cancer-fighting, immune-boosting anthocyanins found in blueberries are also present in purple sweet potatoes, which will be in your boxes, as well. Let food be your medicine as you cook your way through these months when our immune systems are most vulnerable.

Spring onions and asparagus are also making an early appearance to brighten up the heartiest of winter meals. Bok choy and kale, two of the leading vegetables in calcium content, will be included in the lineup to fight off infections, as calcium helps to regulate the production of immune cells. Improve circulation and blood pressure with beets to help the flow of all these nutrients reach from head to toe.

We all know vitamin C will give our immune systems a boost, but it also enhances our ability to absorb iron. Pair your citrus with iron-rich foods (such as beans!) for optimal absorption. We will keep you stocked with fresh tangerines, apples, lemons, and kiwis to enjoy all winter. May your health thrive as you continue to eat fresh, local produce.
