Preheat oven to 350 degrees. Cut delicata squash in half lengthwise and scoop out all the seeds. Lay each half on its flat side and evenly cut ¼ to ½ inch thick slices. Then cut carrots into 1 -1 ½ inch long pieces. Finally, cut up spring onion bulb into quarters. Spread across sheet pan and drizzle with olive oil. Put sheet pan in oven for about 30 minutes. While the rest of the veggies are cooking, cut ends off green beans. After 30 minutes, spread green beans across sheet pan and season entire pan. Roast for another 20 minutes then add walnuts or sliced almonds and continue roasting for another 10 minutes. Take out of oven, let cool for 5-10 minutes, then enjoy!
