Honey Butter Granola with Peaches

Ingredients

  • 1/4 cup butter
  • 1/4 cup coconut oil
  • 1/2 cup honey
  • 1 tsp almond extract
  • 4 cups rolled oats
  • 1 cup rice cereal
  • 1/4 tsp salt
  • 1/2 cup pumpkin seeds
  • 2 Tbsp chia seeds
  • 1/2 cup almonds, chopped
  • 1/2 cup raisins

Directions

  1. Preheat oven to 325 and prepare a large baking sheet with parchment paper.
  2. Into a glass measuring cup (pyrex) melt 1/4 cup butter and 1/4 cup coconut oil. Next add 1/2 cup honey to the warm oil and 1 tsp almond extract. Stir and set aside.
  3. To a large mixing bowl add the oats, rice cereal, salt, seeds, and almonds.
  4. Pour the wet ingredients over the dry ingredients and mix well to coat all the oats.
  5. Spread out onto the parchment paper lined baking sheet and bake for 40 min. Sprinkle raisins over baked, warm granola and let cool.
  6. Serve with milk or yogurt and fresh summer peaches!
