2 heads little gem lettuce or 1 bunch of spinach, chopped
1 cup fresh strawberries, sliced
1/2 cup blueberries
2 radishes, thinly sliced (optional)
1/4 cup toasted almonds, chopped
Poppyseed Dressing Ingredients:
1/2 cup mayonnaise
2 Tbsp milk
2 Tbsp sugar
1/4 cup white wine vinegar
1 Tbsp poppy seeds
1/2 tsp dry mustard
1/8 tsp salt
Directions
For the dressing, combine all ingredients and whisk until smooth. Transfer to a jar and refrigerate until you are ready to serve. Shake well before using. This will keep in the refrigerator for up to a week.
Wash and prep all salad ingredients. Add to a large bowl and toss with desired amount of poppyseed dressing when ready to serve.
