In a large bowl toss together the Napa cabbage, cilantro, shredded carrot, radishes, scallions, and peanuts. This salad holds up wonderfully for meal prep, so before it’s dressed, portion into containers to enjoy throughout the week.
To a jar add the peanut butter, rice vinegar, lime juice, vegetable oil, sesame oil, soy sauce, honey or sugar, garlic, and ginger. Stir or shake to combine. If the dressing is too thick add water to thin to desired consistency. Toss with salad, reserving some dressing for remaining salad portions.
