Mix together soy sauce, honey, mustard, and garlic in a small saucepan and bring to a boil. Reduce heat and let simmer for 10 minutes until sauce has thickened. Remove from heat.
Preheat grill to medium heat, @ 350 degrees. Skewer apricots and dice chicken. Brush both side with vegetable oil and sprinkle with salt and pepper. Place skewers on grill and cook for 5-6 minutes per side with the lid closed until chicken is cooked through. The last 2 minutes of cooking, brush the skewers with the honey and soy sauce glaze.
Remove from heat and sprinkle with chopped cilantro.
