Peach, Corn and Avocado Salsa

Ingredients

  • 3 medium peaches, pit removed and chopped
  • 2 ears of sweet corn, kernels cut off the cobb
  • 1 cup of chopped tomatoes, canned or fresh
  • ½ cup of chopped red onion
  • 1 jalapeno, minced (optional)
  • 1/3 cup of chopped cilantro
  • 1 avocado, pit removed and diced
  • 2 Tbsp. lime juice
  • Salt and pepper to taste

Directions

  1. In a large bowl, combine all the ingredients. Chill in fridge 1-2 hours before serving then enjoy with chips or topped on grilled chicken or steak!
