Peach, Corn and Avocado Salsa
Ingredients
3 medium peaches, pit removed and chopped
2 ears of sweet corn, kernels cut off the cobb
1 cup of chopped tomatoes, canned or fresh
½ cup of chopped red onion
1 jalapeno, minced (optional)
1/3 cup of chopped cilantro
1 avocado, pit removed and diced
2 Tbsp. lime juice
Salt and pepper to taste
Directions
In a large bowl, combine all the ingredients. Chill in fridge 1-2 hours before serving then enjoy with chips or topped on grilled chicken or steak!
